Sweet potatoes tabbouleh

(4 personnes)



1 or 2 sweet potatoes
1 handfull cashew nuts
1 orange juice freshly squeezed
1 garlic clove
1 table spoon tamari
2 table spoon colza oil
black pepper




Peel sweet potatoes and cut them in pieces. Peel the clove of garlic and press the orange. In a mixer Magimix with blade S, put down cashew nuts and mix them, add then sweet potatoes, piece after piece, and the clove of garlic. Mix the whole until the obtaining of a texture which looks like a tabbouleh. Put down the mixture in a salad bowl and add orange juice, tamari, colza oil and black pepper. Let rest a few moments before serving with a green salad or a sauce with herbs.


Variant: for a softer tabbouleh, add some pieces of figs finely cut and for a less soft tabbouleh, add a little ginger, cumin or other spice of your tastes.
