Sweet potatoes tabbouleh

1 or 2 sweet potatoes
1 handfull cashew nuts
1 orange juice freshly squeezed
1 garlic clove
1 table spoon tamari
2 table spoon colza oil
black pepper

 

 

 


Peel sweet potatoes and cut them in pieces.

Peel garlic and press the orange.

In a mixer Magimix with blade S, put down cashew nuts and mix them, add then sweet potatoes, piece after piece, and the clove of garlic.

Mix the whole until obtaining of a texture which looks like a tabbouleh.

Put down the mixture in a salad bowl and add orange juice, tamari, colza oil and black pepper.

Let rest a few moments before serving with a green salad or a sauce with herbs.

 

Variant: for a softer tabbouleh, add some pieces of figs finely cut

and for a less soft tabbouleh, add a little ginger, cumin or other spice of your tastes.
